This is not a good lesson. Nowhere is it stated what we are supposed to be learning here. There are just some examples and we're supposed to figure out the differences between them in order to ascertain what the lesson is.

Isn’t the bold lesson heading pretty unambiguous? - "Compound colour names and colour names derived from things are invariable" There’s also a link to the more common variable adjectives "See also regular colour adjectives: Colour descriptions change according to gender and number (French Colour Adjectives) "
